Spicy Beef Salad

INGREDIENTS
500g Bertocchi Gold Rump Steak
1 red onion sliced
1 red capsicum sliced
1 cucumber sliced
1 red chilli chopped
1 punnet grape tomatoes
½ cup fresh basil chopped
½ cup fresh mint chopped
½ cup fresh coriander chopped
Dressing
1 lime rind grated
1 tbsp peanut oil
1 tbsp fish oil
1 tbsp chilli sauce
Salt and pepper to taste
PREPARATION
Prepare the dressing first by adding all dressing ingredients to a jar and shake well.
In a bowl, mix all salad ingredients except the chopped chilliand dressing. Cover and refrigerate.
Grill or pan fry the rump steak until cooked medium. Rest for 10mins.
Thinly slice the rump steak and add to the salad ingredients.
Add the dressing and toss the salad gently to combine, season with salt and pepper and top with the chopped chilli.
