INGREDIENTS
1/3 cup instant coffee granules
500ml boiling water
600ml thickened cream
250g Bertocchi Cheese Club Mascarpone
1/3 cup marsala
1/2 cup caster sugar
500g sponge finger biscuits
2 tspn cocoa powder
40g dark chocolate finely grated
PREPARATION
In bowl dissolve coffee granules in boiling water, then allow to cool
Place thickened cream, mascarpone, marsala and sugar in a separate large mixing bowl
Using an electric beater, beat cream mixture until combined and resembles whipped cream
Dip 12 sponge fingers into the coffee one at a time, turning so that they are coated without being soggy. Layer as you go in a serving dish to cover base, ensuring there are no gaps
Using a spatula, spread half the cream mixture over sponge fingers to cover. Dust over 1 tspn of cocoa and sprinkle with half the grated chocolate
Repeat layer using remaining sponge fingers dipped in coffee, finishing with the cream mixture
Cover with plastic wrap and chill in the refrigerator for a minimum of 4 hours or overnight. 7
Remove from refrigerator just before serving and dust with remaining cocoa and chocolate
